VEGETABLE PATTIES

 

 

 

Ingredients

  • 3 medium sized tomatoes
  • ½ red onion
  • 2-3 tablespoons chopped mint
  • Basil leaves
  • 1-2 teaspoons oregano
  • 1 tablespoon dill
  • Acropolis Classic Olive Oil
  • Salt/Pepper
  • 1 cup of flour
  • ¼ teaspoon baking soda

 

Method

  • Chop the tomatoes and onion and put in a bowl.
  • Add the Basil, mint, oregano, dill, and pepper to tomato mixture and mix. Add the flour and baking soda to the tomato mixtureLet the mixture sit. The mixture should be soft and a bit liquidy. Make them into burger shapes.
  • In a pan heat the Acropolis Classic Olive Oil. Fry the patties for about 2 minutes on each side.
  • Place on paper towels to soak up some of the oil and serve.
